When we’re short on time and want dinner on the table, reaching for the easiest thing in our fridge or cupboard is tempting. However, that usually means going for takeout or packaged food, which tends to mean an unhealthful and over-processed diet. Instead of reaching, try this minute veggie stir fry recipe! I love vegetables. They’re healthy and delicious. But I can’t always find the time to make a big stir fry. That’s why I developed this quick and easy recipe for minute veggie stir fry that requires only one pot and takes about 10 minutes from start to finish.

The Ingredients

One lb. of fresh stir fry vegetables (mixed assortment)

Two tablespoons of soy sauce or tamari, Â1⁄2 teaspoon of garlic powder, Â1⁄2 teaspoon of red pepper flakes

1. Peel and slice the onion, carrots, and celery into strips. Wash the cabbage well and cut it into long thin slices. Chop the broccoli florets small. Slice the peppers thinly or cut them into chunks if you prefer smaller pieces in your dish-heat olive oil in a large skillet over medium-high heat, then add onions, celery, and carrots with a pinch of salt and sauté for 4 minutes until they begin to brown slightly on edges but not too much as they will cook more in next step.

The Preparation

-Cook rice according to package directions

-Chop vegetables (broccoli, carrot, red pepper) into bite-sized pieces

-Heat cooking oil in a frying pan over medium heat for about 30 seconds or until the oil is hot enough. Add the vegetables and cook for 3 minutes until tender but still crisp. Add soy sauce and sugar and cook for one more minute, stirring constantly.

The Cooking

In a wok or skillet, heat oil over medium-high heat. Add garlic and ginger and stir fry until fragrant (about 30 seconds). Add carrots and water chestnuts. Cook until tender (2-3 minutes). Add the bok choy or broccoli and cook for 1 minute. Transfer the mixture to a bowl, top with sesame seeds, and serve.
